Vieux, meaning 'old' in French, refers to aged spirits, particularly in the context of Rhum Agricole, where it denotes rum that has matured in oak barrels for extended periods. In Martinique's AOC system, specific aging requirements must be met to earn this designation.

The aging classifications for rhum agricole are strictly regulated. Rhum vieux must age for at least three years, while additional designations like VO (Very Old), VSOP (Very Superior Old Pale), and XO (Extra Old) indicate progressively longer maturation periods, similar to the cognac system.

During aging in the tropical Caribbean climate, the rum undergoes rapid maturation, developing complex flavors of vanilla, caramel, dried fruits, and spices. The porous oak barrels allow interaction with the environment, and the high temperatures accelerate the chemical reactions that create aged spirits' characteristic depth.

The angel's share - the portion of spirit lost to evaporation during aging - is particularly significant in the Caribbean, sometimes reaching 10% per year. This concentration effect intensifies flavors and contributes to the rich character of well-aged rhum vieux.

Premium aged agricole rums rival the finest cognacs and whiskies in complexity and refinement, deserving to be sipped neat or with minimal dilution to appreciate their full character. They represent the pinnacle of Caribbean rum production.
